Beef Summer Sausage

springfield area, MO(Zone 5b)

2 lb lean ground hamburger
2 TBS liquid smoke flavoring
1/2 tsp each garlic powder onion powder mustard seed
1 C water
3 TBS Morton's Tender Quick Curing Salt
(You may alter the smoke, salt and spice to your liking)

Combine all ingredients. Mix WELL. Shape into 3 rolls approximately 2" diameter.
Wrap snugly with aluminum baking foil, shiny side IN. Refrigerate 24 hours.
Poke holes using a toothpick in bottom of the rolls. Place in a broiler rack over a pan with 1/2 inch of water in it. Bake at 325 for 90 mins. Slice after chilling. Keep refrigerated.

I thought this might come in handy for the holidays. I like summer sausage and smoked meats, but for one they are expensive and another thing is they are greasy! I use a lean meat and these are really good. I like them with Ritz crackers and cheese slices. They make the house smell yummy when they cook and your doggie will go nuts!
