Crock Pot Pork Loin Roast

Greensboro, NC(Zone 7a)

OK, I found this recipe at recipezaar and it sounds pretty good. I've never made a pork loin roast (reading right off the package)--actually haven't had pork roast since the mid 80's when my mom made them.

I bought a 1 lb tub of precut butternut squash that I thought would go well with it--when I was considering a different recipe. Do you think I could still use the following recipe with the addition of the butternut squash or would the flavors be weird together?

3 lb pork loin roast
1/3 c honey
1/3 c dijon mustard
1/4 tsp garlic powder
1/2 tsp rosemary
1 c water-divided
1/2 cube of beef bouillon (have soup base)
salt and pepper

Gravy from pan juices:
2/3 T marsala wine
1 T cornstarch
3 T water

The recipe is for the oven but a reviewer who gave it 5 stars used her crockpot for 6 hrs on low with no water added. I was considering putting the squash and 1/2 an onion sliced on the bottom and the roast on top.

Any opinions or suggestions? Thanks!
