Sandwich cookie filling?

Help!!
I made a bunch of bitesized cookies with the intention of making little sandwich cookies. Now I can't seem to find a recipe for the filling that doesn't require refrigeration. I need to be able to mail these, so they must survive a non-refrigerated trip (tho it will probablt be pretty cold in transit to NY).

Any ideas?
