Stuffed Jalepeno's

I have a fresh jalepeno stuffed with cheese for breakfast each day.. I was at a crawfish boil and they had stuffed shredded and seasoned chicken with a batter on them and were frying them up.. the tops still on.. How do they do that..???Slice the back? anyone have a recipe? They were sooo good!
