Puddles is a layer!

Fort Worth, TX

Puddles has laid 2 eggs now! I am excited to use the eggs in cooking as we don't need more ducks. Can you use them in deviled eggs? I haven't tasted one so I really don't know how they taste. Does anyone have good recipes for duck eggs?

Duck eggs are great in baking.

I bet Daylily Daddy knows about duck eggs........

I considered getting ducks for their eggs before chickens. I read quite a bit about them. People either love them or hate them, from what I can tell. The eggs have a stronger taste, but people that like them just rave about them.

Check out this site... this guy has a lot of useful information.

i have always heard duck eggs r tastier to eat but i've never eaten one. suppost to be great for bakeing cause u don't got to use a many eggs since they r bigger.

I love them in meatloaf-it makes a nice rich loaf. I use them just as you would chicken eggs. They have higher protein than the chicken eggs.
Metzer Farms has a webpage showing the differences between chicken eggs and duck eggs. http://www.metzerfarms.com/nutri.htm

You should put that on the chicken thread i still say we should make that thread a sticky then we wouldn't have to go find it when we have a new Link. We could just start a new one and bring those to it and have no posting comments and just chicken, duck, turkey, pigeon, dove links.

Sue, RI(Zone 6a)

Sounds good!

(Zone 7b)

I'll see if i can get grow to start a new one with all the links and ask that nobody comment on it then we could get management to make it a sticky. As we find links we could just add them there and it would be a useful thread for anybody needing to know something.

Sue, RI(Zone 6a)

That would be a tremendous help to everyone. Sometimes a question comes up when everyone is doing their chores!

I totally agree there, we need sticky's with important info.

I sent Grow a Dmail i thought i would let her approve it since she started the first one...........just waitin on and answer will keep yall posted

Very good.

I was surprised to see the yolk was so much bigger in the duck egg. I haven't eaten one yet but there is one in the fridge I brought in today. According to weight watchers they count 3 points whereas a chicken egg counts as 2 points. Thanks for the links y'all!

Welcome Bluesmaven!

I had duck eggs as a kid and loved them. I was grossed out as all kids are at first, but after eating them, I was hooked! They just taste stronger if I remember correctly. Sounds yummy!
Congratulations!

Still waiting on Grownut i wouldn't want to do it without her being here since she started the thread ;o)

The one thing that grossed out my DD with the duck eggs is how the white of the egg never seems to want to let go of the eggshell!

Fort Worth, TX

yeah I noticed that but thought I had just left it to boil too long.

Sue, RI(Zone 6a)

Duck eggs are the same as chicken eggs; when boiling it's better to use older eggs as the fresh ones tend to stick to the shell.

Fort Worth, TX

well that's good to know! How long are they good if kept refrigerated?

Sue, RI(Zone 6a)

To be honest I wasn't sure(thought about a month). So I googled it and came up with 6 weeks w/ proper refrigeration because of the duck's thicker shell it lasts longer than chicken eggs. Mine never hung around that long!!

(Tia) Norman, OK(Zone 7a)

I can not wait till spring when my ducks start laying. I have about 30 or so and probably more before all is said and done. YES I will make deviled eggs out of some of the duck eggs just because I can. I will let ya know.

I just love to listen to them and watch them fly from the coop to the pond.

Fort Worth, TX

So do you do anything different in your deviled egg recipe? I have 3 eggs now refrigerated. I'd like to get a dozen before I make deviled eggs though. I love that she's a layer but I never thought about it before.
