Mushy apples?

Knoxville, TN(Zone 7a)

I just got married and for wedding favors, I gave out apple butter. My husband and I greatly overestimated the amount of apples we would need to do this so we have close to 1.5 boxes of apples left. They're granny smith and stayman winesap. We bought them two weeks ago and they've been stored in an unheated room in our house. We tried several of the winesaps today and they're pretty mushy although the flavor is still good. What can I do with these apples? I hate to just toss them in the compost. Will they make good apple butter still? What about applesauce? I stuck a few mushy slices on our dehydrator to see how that would work. I had planned on making some apple pie filling and chunky applesauce with them but at this point, I just don't want to waste them.
