Banana Nut Bread
2 c. plain flour
1 tsp baking soda
1/2 tsp salt
2 lg. eggs
1/2 c. finely chopped walnuts
1 stk. butter at room temp
1 1/2 c. sugar
3 lg. or 4 sm. very ripe bananas well mashed
Cream butter and gradually add sugar. Blend in eggs one at a time. Add bananas mixing well. Slowly add flour and baking soda mixing well. Stir in Walnuts. Pour into greased(I use spray oil) loaf pan and bake 350 for 50 to 60 minutes or until it test done with tooth pic. Cool in pan 10 minutes then turn out onto wire rack to finish cooling
Pumpkin Spice Bread
3 c. sugar
1 c. vegetable oil
4 eggs, lightly beaten
1- 16 oz can solid pack pumpkin (not pie mix)
3 1/2 c. plain flour
2 tsp baking soda
1 tsp baking powder
1 tsp salt
3 tsp pumpkin spice
1/2 c. water
1 c. pecan chips (optional)
1 c. raisins (optional)
1 c. flaked coconut (optional)
(I use all 3 in mine)
In lg. bowl combine oil, sugar, and eggs. Add pumpkin and spice, mix well. Combine the rest of the dry ingredients and add to pumpkin mix alternating flour and water. Starting and ending with flour. Pour into 2 greased loaf pans. Bake 350 for 60 to 70 minutes or until it test done. Cool in pans 10 minutes then turn out onto wire wrack to finish cooling.
Both of these freeze very well wrapped in heavy foil. Just thaw and eat
