We used to live in Colorado Springs and they have the most beautiful hotel there (we LIVED there so never did stay there but oh would love to someday!) called the Broadmoor. And in a magazine years back I saved this recipe:
Broadmoor Cheese Ball, makes 1
2 packs cream cheese, room temperature
½ c. Old Farm House Chutney
½ c. shredded mozzarella
½ c. shredded cheddar
¼ c. minced scallion
1 head garlic, minced
salt and pepper, to taste
1 c. finely chopped pecans
1. Prepare the scallion and garlic as directed above.
2. Cream all but the pecans together.
3. Form a cheese ball. Roll it into the nuts, thoroughly coating.
4. Chill until more firm, serve with crackers and/or fresh vegetables.
