Its almost that time to start thinking about your holiday baking. What is your favorite Christmas cookie recipe? Here is mine....It came out of my Betty Crocker Cookbook from the early 50's. I use it to make my form cookies like the Santa you see in the picture. Instead of using butter, I use Imperial Margarine for all of my Christmas cookies.
Scotch Short Bread
1 cup of soft margarine (Imperial)
1/2 cup plus 2 TBS sugar
2 1/2 cups flour sifted
Mix all the ingreidents and chill several hours before rolling out. Use your different Christmas Cookie cut outs.
Bake in a slow oven (300 degrees) for 20 to 25 minutes
When I bake these, I usually bake ahead and let them sit for a few days in a container before I decorate them. I also double the recipe.
When I start my holiday baking, I usually make all of my cookie batter at one time. I make about 15 different cookies. I make each recipe and put into zip lock bags, along with the recipe in the bag. That way I make one big mess in my kitchen, and get the hard part out of the way. Then I take out one cookie batter out and bake one batch a day or every other day depending on my timeframe. This makes my holiday baking so much easier.
