TOTALLY OFF TOPIC - Persimmon uses

I need some help and since you all are the smartest most intellectual people I know (note to self: good comments always get good results). I need to know what to do with persimmons. My trees are loaded and am trying to can things to use this winter. I saw recipes for cakes, cookies and bread, but need something to last all winter.

I freeze my persimmons--it makes them better. And the cookies freeze too. Cookies, definitely cookies.

I think drying them also sweetens them. Then use 'em in any recipe like...I can't remember, but there's a website for it...

Thank you guys for the suggestions. Cat do you have the cookie recipe and grow if you happen across the website for persimmons I would love it. Will try and get a picture of the tree on here soon.

My yard is full of Pokeweed! Which no one here recognizes, though the mockingbirds love it.

We don't have armadillos around here, but we saw one while we were in Florida in May and he was so stinking cute! I don't think they'd hurt a fly --- ok, well maybe a fly. ha!
