Dried Cranberry & Apricot Easy Apple Cake

Someone asked me to post this recipe. It's a great looking and tasting cake. The recipe comes from Penzey's Spices.

Dried Cranberry & Apricot Easy Apple Cake


3 baking apples
1-1/2 sticks butter, room temp
1 cup sugar
3 eggs
1 tsp vanilla extract
1-1/3 cup flour
1/4-1 tsp cinnamon
1 tsp baking powder
1/2 cup raisins
1/4 cup dried cranberries
1/4 cup dried apricots, diced
powdered sugar for dusting

Preheat oven to 350

Peel, core and quarter apples then cover with water to prevent them from browning.
Cream togetherthe butter and sugar. Add eggs and vanilla extract, beat until well mixed.
In a separate bowl, sift together flour, baking powder and cinnamon. Add the flour mixture and mix well. Fold in the raisins, cranberries, and apricots and gently combine. Pour into a greased 9-inch round pan, push the apples into the batter, and bake for 40-50 minutes until the sponge is golden brown and coming away from the edges of the pan. Dust with powdered sugar to serve.

Serves: 6-8
Prep time: 15 minutes
Baking time: 40-50 minutes
