Help me name this soup! I hope you try it.
3 cans butter beans
2 lbs torn fresh kale leaves
10 carrots
3 large sweet potatoes
3 large onions
2 quarts boxed veggie broth or chicken broth
4 tsp dried tarragon (more to taste)
2 tsp dried rosemary
crock pot on high for 5 hours... low for up to 9 hours, this just gets more mellow with time.
Large dice, big pieces won't cook away... making a very hearty, healthy, fiber-rich soup.
This has a delicious, fragrant broth... true comfort food. Would be amazing with a crouton and melted sharp white cheddar cheese... but amazing as-is.
