Anise hyssop (Agastache foeniculum) blooms a nice purple.
Hibiscus sabdariffa (the kind used in teas) is a lovely deep, dark purple/burgundy.

Calgary, AB(Zone 3a)

Oxalis siliguosa 'Sunset Velvet' but its a prolific self sower here so you would have to watch it. Behaves itself in a dry bed though. Dark purple foliage that turns hot pink in the fall.

Chocolate mint is a little on the purple side.
You said allium, so chives…
Purple Bee Balm

Do you want to get into the vegetables? Then you can add purple carrots and beans.

Thai basil has lavender/purple blooms. There are some hot peppers with nice purple color in the leaves and peppers (lavender blooms, too).

Oxalis is a herb but ya I don't think the purple variety is good to eat. I haven't tried it.

Red Perilla is a herb. It is an outstanding purple plant in the garden.Very easy to grow from seed.People always ask me what it is.I've grown it for years,in several different locations in the garden.

Frederick, MD(Zone 6b)

I've grown it for several years now, too, ever since one lone perilla plant went to seed on me... It self-sows like a madman! It's ornamental and pretty easy to pull up from where it's unwanted.
