Great for giving during the holidays
1 cup of Sugar
1/2 cup of light corn syrup
1/4 cup of water
1/2 cup of butter
1 1/4 cups of cashews. (roasted but unsalted)
1/2 teaspoon of baking soda
In a heavy saucepan combine the sugar, corn syrup and water. Cook over medium heat stirring until sugar dissolves. Bring to a boil. Blend in the butter. Stir constantly when it reaches the thread stage. When the temp. is 280 degrees add the cashews. When it reaches 300 degrees remove from heat and stir in baking soda. Poor into buttered jelly roll pan. As candy cools stretch it out thinner by lifting and pulling at the edges with a fork. Loosen from the pan as soon as possible and turn over. Break it into pieces when it hardens.
