I went to my local farmer's market today to buy heirloom tomatoes. Mine are just not doing well, and I needed a tomato fix! I found a lot of other things! Cucumber is from my garden, but found a big round green zucchini, some green peppers, fresh garlic, several types of heirloom tomatoes, an heirloom mini cantaloupe, a couple new hybrid mini-loupes, a mini watermelon, bought a couple pounds of grass fed stew beef to try. The apples are "Pristine" I bought an a local orchard yesterday.
And, I bought these beautiful small eggplant. There is a long solid purple and several shorter striped ones. I have only fixed eggplant a few times, and those were the only times I have eaten them. I liked them... rattatoui (sp?????) and breaded and made into eggplant parmesan. I bought these from a woman I buy a lot of produce from - her farm is near me and I go right to her farm and buy things during the week. She told me to slice them, salt them, leave for a while, rinse and pat dry. Then, coat with olive oil, and roast in a hot oven or grill. She said to add other veggies like tomatoes, garlic, peppers, onions - anything you like and salt and pepper, perhaps balsamic vinegar.
I would not say I am a gourmet, but I have an decent pantry - I have balsamic vinegar for example. But, I live out in the country, so what ever I make it has to be from something I have on hand.
I am wondering if I could use this roasted veggie mix over pasta? I know I have bow-ties and rotelle. Would it be better hot or cold?? Would it be good if I add one of the green peppers or would it over power it? Same question about kalamata olives or feta? Am I better to just stick to eggplant, garlic and tomato?
LOL - this stuff is so pretty I feel like finding pretty platters or bowls and taking photos of them all afternoon! Wish I knew about arranging!
So ----- any suggestions on what I can do with these pretty purple beauties from what I might have on hand??? LOL
