Mango Salsa

Louisville, KY(Zone 6a)

One ripe mango, diced
3-4 large tomatoes...seeded...cut in half and shake out
3-4 med Med onions
3-4 Med bell peppers, any color
2-6 jalepenos, depending on taste (can get hotter overnight)
1/2 bunch cilantro, finely chopped
2-3 TBs chopped garlic( I used the canned stuff)
3 Tbs red wine Vinegar
Salt and Pepper to taste

I Process each veggie indiviauly in a food processor, just until chopped. Place tomatoes, peppers, onions in bowl, and let set a few minutes then drain excess liguid. Then add remaining ingredients and refrigerate over night preferably. Let flavors marry and enjoy! Great with Tequilla lime chicken tacos or by itself with a huge bag of chips!
