CHILI ANCHOVIES

Toronto, ON(Zone 5b)

This is great as snacks or with rice. Don't use try using the canned wet anchovies though. I got mine from the asian store...you can find them with the dried fish/seafood OR the frozen section (just remember, no brine/liquid allowed)

CHILI ANCHOVIES

1 cup dried medium-sized anchovies
1 teaspoon brown sugar
3 tablespoons white sugar
2 tablespoons hot water
1 tablespoon Korean chili powder or chili paste, or whichever type of chillies you prefer (you can add some more if you'd like)

-Submerge dried anchovies in hot/warmwater to take out salt for about 30 minutes.
-Drain anchovies until damp/almost dry and fry until crispy, and take out from the pan.
-Combine all other ingredients together and cook on the same pan until it bubbles.
-Add in the fried anchovies with the chili paste until all are coated.
-Let cool and store in an airtight container.
