Low Sodium, Low Fat and High in Flavor Recipes needed

(Maggi) Big Sandy, TX(Zone 8a)

We're on a reduced sodium (blood pressure), reduced animal fat (cholesterol) lifestyle change. I would prefer to limit my carbs somewhat although that's not totally necessary.

We eat beef or pork once a month, the rest of the month it's chicken or fish. DH has had to limit his cheese intake, and he's a real cheese hound :~) so that's hard for him. Neither one of us is much overweight anymore although we both carry a few extra pounds.

Anyway, I also need to work more vegetables into our diet and I am bored, bored, bored with the same old ways of cooking chicken and fish.

I have the facility to grill anything and in the heat we're having here now that's a good thing, the less I heat the house with cooking the better.

Oh, we also don't use much sugar (DH gets ferocious headaches and uses Stevia as a sweetener now) but we do use honey. I stay away from prepared and packaged foods as much as possible, preferring to start from scratch when that's practical.

Oh, and we live miles from the nearest grocery store which doesn't offer a whole lot of variety.

Any suggestions for something light and tasty??
