My white ginger bloomed for the first time this summer. I'm not sure what to do now. Do I cut down the stalks that have finished blooming?

Guavagirl, you can leave them up. They won't bloom again from that same inflorescence though. I just prefer to whack all mine back all the same time in the fall or wait til the spring. By the spring the winter has killed the foliage and they pull easily from the rhizome. No frost problems there for you though LOL!
