braised turkey breast

last week while in philly pa. my son took me and my wife to a food market. one of the stores sold only chicken and turkeys. we bought smoked turkey bacon and smoked turkey breakfast sausage. also picked up a large turkey roast and two turkey breast (they called them turkey london broils). the breasts were huge (they completely filled my 5 qt. braising pot). here is what i did with them as well as the side dish i used.

first i lightly browned the breast in my five qt braising pot on both sides over medium high heat. i removed the breast and set it aside in a 9 x 12 baking dish.

i then cut several vegetable into 1/4 inch pieces. i used onions, carrots, celery and zucchini. i used the same braising pot to cook the vegetables as i did with the turkey. i only needed to add just a bit more oil. i cooked the vegetables until they were lightly browned at which point i put the turkey breast on top of the vegetables and added chicken stock until it was about 1/3 up the side of the pot but not completely covering the breast.

i placed the pot with its cover in a preheated 300 degree oven and cooked it for about an hour or until the vegetables were soft and you could put the tines of a fork right through the breast.

while the turkey was cooking in the oven i took some hansel eggplants from my garden (these are the ones that grown about 8 iinches long and are aboutthe size of a quarter around.). i finely diced the eggplants and put them in a small fry pan with a bit of butter and cooked until they were soft. i set them aside and made my rice and beans side dish. i cooked brown rice according to directions and drained a can of red kidney beans.

i removed the turkey from the oven and let it stand for 10 minutes or so during which i added the eggplants and beans to the rice and poured the mixtured into a 9 x 12 baking dish which i then topped with some grated cheese. i placed this into the oven and baked until the cheese browned a bit.

i made this dish without a recipe and it turned out very good.
