What to do with all that squash....

Here are a few recipes that you might like:

Cotton’s Yellow Squash Casserole

4 medium squash
3 medium tomatoes
1 lg green pepper
2 medium onions
1 tsp salt
8 oz. cheddar
3 slices bacon
½ tsp pepper
¾ c bread crumbs
½ stick butter, melted

Fry bacon and drain. Chop tomatoes and onion and green pepper. Mix together all veggies with crumbled bacon and cheese. Add salt and pepper. Put in 2 quart casserole. Top with buttered bread crumbs (mix the ½ stick melted butter and bread crumbs).

Bake at 400 for 1 hour uncovered.


Squash Patties

1 c all purpose flour
1 tsp sugar
½ tsp salt
¾ c milk
1 egg
¼ c vegetable oil
3 c grated yellow squash
1 med onion, chopped

Combine first 6 ingredients. Beat with mixer until smooth. Add remaining ingredients. Stir well. Drop mixture by teaspoonsful on hot greased skillet. Cook until golden brown. Turn once. Drain on paper towel.
Makes 2 dozen.

(this sort of reminds me of fried green tomatoes).
