Got this recipe from a cottage living magazine....haven't tried it but looks delish!

PB Cookies---makes 24 cookies

8 T softened butter
1 C peanut butter
1/2 C brown sugar
1/2 C white sugar
1 egg
1 teas vanilla
1 C flour
1 teas baking soda
1/2 teas salt

1. Mix all together.
2. Scoop rounded tablespoonfuls onto cookie sheet.
3. Flatten each with a fork dipped in sugar.
4. Bake at 375 for 12 mins.


When cooled beat this filling until smooth, then spread 1 tablespoon worth on the bottom of one cookie and top it (sandwich it) with another cookie.

PB Cookie Filling

6 oz of cream cheese softened
1/2 C peanut butter
5 T powdered sugar
