Your garden is looking good - such healthy happy plants! The little eggplants are cute.
I gew eggplant last year for the first time and it makes the most beautiful plant when it gets full. The flowers I could not beleive. The flowers alone are so pretty even if you did not like to eat eggplant. deanna
indy - the package says they grow about 18 inches long
deanna - why grow something you don't eat. but i do agree, they are a pretty sight.

bocabob - it sure is easier i'll tell you that. my automatic watering system (soaker hose attached to a timer) waters every day from 8 a.m. to 10 a.m. i just wish i could get the same size tomatoes from my containes that i got when i had the regular garden. i mentioned somewhere that i have been looking at those big tubs with the rope handels for my plants for next season. i wasthinking that i would get bigger plants and thus bigger fruit than the ones in the 5 gallon ones.
tommy - they are lettuce leaf basil and the leaves are very large. as soon as i open up the door to the deck the aroma of the basil comes into the house.

herbie43 - I bought 2 - 25 gallon nursery plastic tubs( I think they are used for palm trees) to try just that. They were only $6.00 each. This fall I'll try them with only one tomato plant in each to see if it really makes a difference.

Indy, you can turn the ads off. Just go up to the tabs and hit 'my info'. Click 'manage preferences'. in the right hand column/box, there will be an 'ads' link. Uncheck the ads boxes and hit 'submit'. That should turn them off.
Herbie, how are you going to prepare your eggplant? I have 8 growing this year (for PF images) and have never experimented with it much in the kitchen. I'd love some tips.

Eggplant Stackers
2 slices unpeeled eggplant, about 3/4" thick
2 thick slices tomato
4 thin slices onion
2 slices cheddar cheese, 1/2" thick
2 slices bacon, halved
sliced cooked chicken
Place eggplant slices in greased, shallow baking dish. Sprinkle w/salt. Top each w/a slice of onion, then a slice of tomato, then another slice on onion, 1 slice of cheese,1 serving of chix, and top w/a slice of bacon (cut in half). Bake at 350, for approx. 40 minutes, or until bacon is cooked.

melody - 90 percent of the eggplants i grow go for eggplant parm. which my wifes makes and then freezes until thanksgiving and christmas holidays.

I got some of those big plastic tubs with the rope handles at Lowes yesterday for $5.97. I was about to buy 20 gallon plastic plant pots for some extra tomato plants for $14.97 each! Then I saw the tubs and put the pots back. These are much bigger than the plant pots and I love the price. Hope I have room for such big pots. I just have to drill some holes in the bottom and I'm ready to go.
Sequee- I bet those stackers would be good with fresh mozzarella. Gonna try that out if I ever get some eggplant growing.
Jenn - I've tried every variation I could think of! In all honesty, I usually leave the bacon off, even though it does add the icing on the cake. I just feel as though I eat enough bacon during tomato season!
Herbie - you just let Ms. Deb know the Eggplant Parm is my absolute favorite dish - ever! (Hmmm...I wonder if THAT was subtle enough?)
Yeah...I'm curious too. There's going to be enough eggplant that I'm gonna have to figure out what method is best to preserve some of it. I've heard that it is best to prepare the eggplant dish and freeze it. What say you?
Herbie I Do plan to eat my eggplant. I have my tomatoes in 5 gal buckets, but the best one growing my Purple Haze is in a styrofoam container. The covers walmart sells for covering your plant in the winter. it is the biggest one. I had never seen them until someone on here said they were marked at clearance for .50. They are normally $1.5 or 2.00. They work great just make sure you have them where you want them because after the dirt is in they are heavy and tend to crack up if you know what I mean(but only if you try to move them).I put holes in the bottom and one on the side for drainage. No tasting yet but lots of little ones, can't wait. Bought it for the name but heard it taste good. deanna

jen - i'm going to start buying them from shoprite next week for next season although i tend to put my drainage holes on the sides of the containers about 2 inches from the bottom. i read somewhere that if you do it this way there would always be some moisture at the bottom of the container.

This is a recipe my grandmother always made. Freezes very well!!
Eggplant Rice Dressing
2 pounds ground chuck beef
1`/2 tube Owens Hot Sausage (ground type)
2-3 bell peppers at least 1 green chopped
1 medium white or yellow onion
1/2 bunch green onions chopped
2-3 cloves garlic chopped
1/2 tsp red pepper (cayenne)
2 medium eggplant peeled and cubed
salt/black pepper to taste
1 1/2 cups long grain white rice
3 cups water
2 cups shredded mild cheddar cheese
In a large pot:
Brown the beef and Owens sausage with all seasonings and vegetables except eggplant. Cover with lid and let simmer for about 30 -40 minutes.Drain some of the meat juices, but not all. Add cubed eggplant to meat mixture and continue to cook until eggplant is almost totally dissolved. Cook rice in water in a separate pot. Stir cooked rice into meat mixture until meat mixture is well distribted throughout the rice. Turn into casserole and sprinkle top with cheddar cheese. Bake at 350 degrees just until cheese melts, about 10 - 15 minutes.
Oops! Chop the white or yellow onion.
