I ate this dish in Atlanta, GA in 1986 at Aunt Fannie's Restaurant. It was kind of like their signature dish. I loved it and so did all the other people with me.
Just looking at the ingredients it appears to be pretty much like most of the other squash recipes you see. I'll guarantee you it does not taste like them! Try it and enjoy!
Aunt Fannie's Baked Squash
Ingredients:
3 lbs. yellow summer squash
1/2 cup chopped onions
1/2 cup cracker meal or bread crumbs
1/2 tsp. black pepper
2 eggs
1/2 stick butter
1 tsp. salt
Topping:
Additional crumbs for topping
1/2 stick butter
Wash and cup up squash. Boil until tender, drain thoroughly, then mash. Add to the squash all ingredients except those for the topping. Mix thoroughly and pour into baking dish which has been sprayed with Pam. Melt remaining butter. Sprinkle top with crumbs and drizzle with butter. Bake in 375 degree over for about one hour or until brown on top.
