Guinea fowl has shown up twice now on the Food Network's "Iron Chef". The food critic judges raved over how perfectly it was cooked. So all those of you with Guinea Fowl for sale can say "as seen and consumed on Iron Chef"!

cool, thanks for the extra endorsement. so, any idea how much folks should be willing to pay? i was thinking 35 for a jumbo or french, 25 for regular sized. some colors don't get full sized for a while though. whites are considered good for eating because the feathers don't leave pin marks...

Apparently in France and Italy it's real common to eat guineas. It's supposed to taste like mild pheasant...which tastes like gamey chicken...so I guess that means guineas taste like a mediocre chicken?

Maybe you need to "hang" it like the Victorians used to do with pheasants. There are reports when properly hung and aged, maggots crawled up the scullery maids' arms as they plucked them.

In the movie; Notting Hill .... co-starred by Hugh Grant & Julia Roberts .... the couple were guests at his sisters birthday party hosted by his best friends. Guinea Fowl was served as the main course. I think its kind of a "classy main entre' " to be honest. My feelings are they taste like pheasant/chicken. I've cooked a couple extra guinea roos on our rotisserie. All I did was baste them with bar-b-q sauce. They were a bit dry ... but that was due to the method of cooking. The sauce was a strong influence in the overall flavor and really the birds tasted like chicken. However; there's no confusing them with 3 month old force fed CornishX. In order to have a large sit-down meal ... you need 3-4 of them. That quantity of culling can reduce the flock of most people pretty quick. Kelly in Moxee
