What is your favorite #1 commercial cookbook reference?

If you had to pick one, who's would it be? Can you provide a link to purchasing/viewing it?

Mine would have to be anything from America's Test Kitchen on PBS. I really enjoy that EACH recipe is throughly tested by the staff. I often cringe at some cookbook recipes and think----ew----who did they test this recipe on? And since cookbooks have no perameters before being published I love with ATK you know the recipes have been tested against several other versions with only their favorite making the book, often with description of WHY it's their favorite.
