I don't think I've seen a thread on this before, and it's now grilling season! I'll start with this one from Real Simple magazine several years ago. It's set up as a meatball recipe but I turn it into burgers. Makes a ton and I just freeze the extra in 2-packs between wax paper or plastic wrap.
Big Spicy Burgers
2 pounds lean ground beef (I use turkey)
2 pounds ground pork (lean if you can find it)
1 medium onion
2 slices soft bread, crusts removed and torn into pieces
5 cloves garlic, minced (I use way more, but that's us!)
2 eggs
1/2 cup chopped fresh parsley
1/4 cup olive oil
1 TBSN Italian seasoning
1 TBSN kosher salt
1 cup Parmesan
2 TBSN black pepper
3 serrano peppers, minced
Red pepper flakes - to taste
In large bowl combine all ingredients. Mix just to combine. Shape the mixture into 16 to 18 burgers.
Grill 7 minutes per side or until done.
