we would like to know what this guy is and how often to water etc ....

Hi Jataylor, its an Aechmea fasciata, a very popular house plant! Just make sure the central vase/tank of the plant has water in it. The soil does not need to be wet, but you can safely water it a little about once a week if its warm. If its cold, keep the soil dry and just top up the vase.
