Zucchini Pie (mmm! good) - a Pie for the season

Delphi, IN

Cut up 1 large yellow or green zucchini into 1" to 1-1/2" cubes. (I prefer to peel mine before chopping up - but doesn't need to be.) Place into boiling water and cook just until tender.

1-1/2 cups cooked zucchini
2/3 cup sugar
1 cup milnot
1 Tbs. flour
1 teas. vanilla
1 egg
3 Tbs margarine

Place all above ingrediants in a blender. Process until smooth. Pour into uncooked 9" pie shell. Bake at 425 degrees for 5-10 minutes; bake 1 hr. at 350 degrees or until done (done is when a toothpick comes out almost clean.

Pie reminiscent of custard pie.
