Miscrowave Custard Sauce

Here's my standby recipe - I make this with many things where you might use whipping cream or ice cream. My family loves it! I nearly always double the recipe. It's great with the peach dumplings I posted under the Elberta Peach thread.

1 1/4 cups milk
3-4 T sugar
1 T cornstarch

1 beaten egg yolk
1 tsp vanilla

Mix milk, sugar and cornstarch thoroughly in a microwave safe bowl (like a big glass measuring cup). Heat in the microwave until boiling. Add a little of the hot mixture to the beaten egg in a separate dish and combine and then pour the mix back into the entire hot mixture and mix well. Microwave again until the entire mixture boils - this part only takes a short time. Add vanilla and mix well. Serve warm or chilled.
