I pay $3.00 a dozen for extra large brown free range candled chicken eggs.

We were told last Saturday that the price will go up because everything else is too. The farmer was taking advance orders for one week only for those who indicated they may have to adjust their orders.

On the other side of the coin he has pastured beef which is not going to be increased presently.

what does candeling mean?

If there is a rooster in the flock there will be chicken in the eggs. The embryo after a certain amount of growth can be seen by holding the egg up to a light. The old timers used candles after dark with no other light in the room. The embryo can be picked out by the cook. The farm kitchens sure did pick them out and use the egg. So could anyone else if an error transpired or human dishonesty let on in the basket to cheat a little. That was distastefull to many non-farm folks. Egg business could be lost for pushing less than so called good eggs. The country store ho ho answer was that none would hatch this week or it's egg if it pours out, chicken if it bounces or winks at you.

Candling is also done to catch cracks in eggs. Rarely do I find anything in my eggs, but often I have a crack that I didn't see when washing them.

Candling used to be done with real candles (back in the day) thus the name candling.

Now, I use a heat lamp type thing with a metal plate on top with a rubber gasket around an inside hole and I sent the egg on there. The light shines up through and I can tell if there is anything there shouldn't be.

I already said on the other thread, but my egg prices are : small $3.25, x large $3.50, jumbo $4.00. No one blinks an eye. Feed, cartons, labels, time for washing are all going up :)

Gee, I usually get a hug and a kiss for my eggs, but that's probably because I don't carge. I'm not in the egg business, just give away the extras (which is about 3 dozen a week right now). SOmeone did want to buy on a regular basis, and offered $4.00 a dozen.

I was going to say that I would never pay that personally, but then I realized how much a dozen actually costs me.

Oh well, I like hugs and kisses. (especially from that cute little UPS guy!)
