I'm going to try to pot up some cuttings from a Salvia officinalis that needs trimmed. Anything I should know?

Oh salvias are the one thing I can root well.lol Take a three to four inch cutting strip lower leaves, try for two nodes. Dip in in hormone (don't have to, but helps) . I use plain ole miracle grow potting mix. Make a hole in damp soil with pencil, insert cutting and nudge soil around stem. Place in shade (favorite place is in under big trees or northern site). If you water only do so in morning or late enough for the soil to drain by nightfall. Roots grow at night and need oxygen. If doing multiple cutting in same pot, make sure leaves don't touch.

Yep three pair of leaf rule for Salvia - pinch out the top, pull off all but the top pair of leaves and slip into soil. Keep in the shade and moist. Salvia are very easy and great to get started with.
Well, I've done Oleanders and Rose of Sharon and those were pretty easy, so Salvia should be a breeze. Thanks Mitch!
