I just went outside to inspect my cherry and apple trees (just got them last year) after our long winter and was dismayed to see all the sideshoots and the very tops of the leaders are chewed off. Are the trees going to recover this year or is this a major setback??
Is surrounding them with wire fence my only option for next winter?

Deer damaged trees
The trees will recover, and yes you may really want to invest in wire fencing - and soon if possible, not next winter.
The deer know that you have a palatable food source available and will be back for more if they get hungry and will teach their fawns where your trees are to boot. If your city/county regulations allow it, if I was you, I'd also look into putting up electric fencing too. Teach them soon that your trees are not a food source.
I put up electric and wire fencing up to protect my trees and have been quite effective in letting the local deer herds know where not to go for an easy meal - especially the baited electric fence.
