Raw meat - now what???

I need a little guidance from the raw feeders among us. An acquaintance has offered me some older (possibly freezer burned) raw beef that she is cleaning out of her freezer, and I thought it might make a nutritious treat for my canine, and possibly feline, kids. I don't know which cuts of beef will be included or exactly how much - just that it's a pretty significant amount of meat and fits into a K-Mart bag.

Anyhow, my questions are these. First, is freezer-burned beef OK to feed to my animals? Second, since I don't intend to switch to a raw diet anytime soon, and this meat will be supplemental to their usual kibble and/or canned food, how much of it should I give them with their meals to avoid digestive upset? Are there raw beef bones that dogs should NOT be given? And what about the cats? Are they likely to even have any interest in raw beef? Do I need to prepare this meat in any way before giving it to the animals? I need some guidelines so that I don't make my kids ill or obese!

The dogs are all young-middle aged adults; 26, 47, and 50 lbs respectively. The cats range from 8.7-22.1 lbs. ;-)
