Dry vs. Fresh Bay Laurel Leaves

Scotts Valley, CA(Zone 9a)

Hello :)

DH is my guinea pig tonight. He's THE most incredibly picky eater on the face of the earth and in 25 years of marriage, I'm finally making a pot roast for the very first time. Yes, he finally consented to a pot roast. The recipe I'm using calls for 3 dry bay leaves. Well, I do have dry bay leaves, but they're probably 20 years old. No, I don't often use bay leaves. ;)

However, I also have 2 huge bay laurel trees in my yard. I know you can use fresh leaves, but I don't know how many to use in lieu of dry bay leaves.

Any help you can provide will be greatly appreciated. :)
