Looking for Recipe for American Chop Suey

HI, My DH's Mom made a dish she called American Chop Suey and he's trying to make it, but so far not successful. He's from the East Coast and I'm a California girl so I really can't help him. We've looked on the web and so far haven't been able to find it. Does anyone make this? It has veggies and a tomato sauce, served over rice ot noodles. I think we came close but there must be a better recipe out there. I thnk it's something that Moms made a long time ago to serve a very large family and not spend a lot.Would love your help!!
