Is there a list or chart somewhere that says which veggies/fruits need bees to set fruit and which are self-pollinated? If its a simple explanation could someone just share this info with me on here? Thank you!

As far as vegetables, cucurbits ( melons, cucumbers, squash) are insect pollinated. Stone fruits (peaches plums etc) apples and others are insect pollinated. Fruits are much more dependent on insects such as bees than are vegetables. If a fruit tree needs a second cultivar for pollination, it will need insects to carry the pollen between plants.
And to attract more bees, you can plant flowers that they enjoy all season. We had some nice bees last year as they are very used to visiting the garden now. My veggie bed is being surrounded by flower gardens - native flowers which attract native bees, and annuals which attract a lot of the honey bees. Plus things like Vitex...

Leave radishes go to flower & you will have bees everywhere, I've got hundreds of bumble bees with about 20' of radish left to flower.
