Saturday night, I got ambitious, and pulled out George Stella's (Food Network "Low Carb and Lovin' It") second cookbook and made "Rachel's Marvelous Macaroons", then got out my dark dark chocolate, melted it, added a little cocoa butter, and covered those little guys with the chocolate. Holy antioxidants, Batman, they are incredible! Yee-hah! They taste kinda' like Mounds Bars, and they're low carb. (I am hypoglycemic, trying not to become diabetic, and I used to LOVE Mounds and Almond Joy). Try it - your favorite macaroon recipe dipped in dark chocolate. It's extraterrestrial!
