We have pot lucks at work quite often...we are definitely a bunch of foodies there:lol: These two recipes have been floating around for a couple of years and we all take turns making them since we all have the recipes now:
Something Good
Crust:
1 1/2 c chopped med/fine pecans
1 1/2 c all-purpose flour
3/4 c butter, softened not melted
First Layer:
2 (8oz) packs of cream cheese, softened to room temp.
2 c of Cool Whip
2 c powdered sugar
Second Layer:
2 (3oz) packs of instant chocolate pudding mix
2 (3oz) packs of instand vanilla pudding (or white chocolate)
4 c cold milk
Topping:
1 (12 oz) tub of Cool Whip
1. Crust: Mix all ingredients together until all dry flour is incorporated with butter.
2. Press mixture firmly into a 9x13 baking pan.
3. Bake at 350 for 20 minutes. Let cool completely.
4. First Layer: Cream the powdered sugar and cream cheese together until blended.
5. Fold in the Cool Whip and mix well. Spread over cooled nut crust.
6. Second Layer: Mix puddings and milk until smooth, well blended and it starts to thicken.
7. Spread gently over the cream cheese layer.
8. Top with Cool Whip.
9. Refrigerate a few hours so the cream chees and pudding set firmly. I served with cocoa
powder sprinkled over the top.
One of the ladies I work with swears that Eagle makes a 7 oz can of Sweetened Condensed Milk but I can't seem to find one, so you'll only use about 2/3'ds of a 14 oz can.
Million Dollar Pie
*makes 2 pies
1/3 c lemon juice (bottled is fine)
2/3'ds of a 14 oz can of sweetened condensed milk
16 oz Cool Whip
1 16-20 oz can of crushed pineapple
1/2 of a small can of mandarin oranges
2-4 maraschino cherries
1/4 c sweet coconut flakes
1 1/2 c pecans-chopped small
1 1/2 c walnuts-chopped small
2 premade or homemade graham cracker crusts
Drain all of the fruit well. Pulse fruit a few times in a mini chopper or food processor to make smaller bits. Drain well. I press out juices in a mesh strainer. The pie won't set properly if the fruit is too wet.
Chop nuts into small bits and pulse coconut into smaller bits.
Mix lemon juice and sweetened condensed milk until well blended and thick.
Fold all ingredients, fruit, nuts, coconut and Cool Whip into the milk mixture until all is well incorporated.
Divide filling between the two pie shells and refrigerate overnight to allow the pie to set and flavors to blend.
All of the stuff in the filling is in tiny bits that all blend into every bite with no one flavor overtaking the other. Very popular.
This is a recipe that is great for bakers. This is a wonderful and easy substitute for the Wilton Cake Release product which I love but costs $4+ a bottle. This was posted at recipezaar.com by Kittencal
Pan Release, Better Than Pam Spray! (Professional Pan Coating)
1/2 c corn oil or canola oil or vegatable oil
1/2 c vegatable shortening, room temp (Crisco is good)
1/2 c all purpose flour
1. Place all ingredients in a mixing bowl
2. Using an electric mixer, beat until mixture has in increased in volume slightly and resembles
marshmallow cream.
3. Place in a storage container and store on the counter or in a cool dry cupboard.
4. In hot weather it may be refrigerated but remember to take it out of the fridge before use as it
should be room temp for easiest use.
5. The mixture tends to separate slightly upon sitting in your cupboard or fridge so mix before
using.
6. Apply using a pastry brush or a clean paper towel to any pans that need to be "prepared".
