Baked pasta

I have been making this one for a few years and love it. The texture and flavor of a baked pasta is out of this world. I was wondering if you all could post some favorites...

Baked Ziti with Tomato, Mozzarella & Sausage

olive oil
1 small onion, chopped
1 clove garlic, minced
1/2-1/3# italian sausage, crumbled
salt & pepper
1/8 c. red wine optional
17 oz. can whole tomatoes, chopped w/ juice
1/8 c. fresh marjoram or oregano, chopped
1/2 c. ricotta
1/2 c. grated pecorino
small pinch nutmeg
1/4 c. parsley, chopped
1/2# ziti
1/4# mozzarella, cubed

Heat oven to 425. Lightly oil large, shallow baking dish.
Bring large pot of salted water to boil.
In large skillet heat 2 T. olive oil over med. heat. Add onion & saute til soft_ 5 min.
Add garlic & sausage & saute til browned. Season w/ salt & pepper. Degrease if needed.
Add wine & reduce til almost gone.
Add tomatoes & juices & simmer 10 min. Add marjoram.
In large bowl mix ricotta, 1/2 pecorino, nutmeg & parsley. Season w/ salt & pepper.
Cook ziti, drain & toss w/ ricotta mixture til well coated. Add sausage & sauce & mix again. Add mozzarella & toss gently.
Pour into baking dish & sprinkle w/ remaining pecorino.
Bake til lightly browned & bubbling_ 20 min.
