I saved off all my dead/brown flower my red and purple bee balm. I have not been able to find any seeds though.
Also I'm wondering why my Bee Balm stayed low to the ground. I've seen pics of others that were nice and sturdy/tall.

I'm not sure about the seeds, since I haven't tried to collect them. Mine stayed low where it had plenty of room to spread out. Where it hit an obstacle or got crowded it grew upward. Perhaps a few bricks set in the ground will give it enough boundaries to start it growing upward.
re: seeds in the Monarda. The seedheads should look something like the photo below.
If you shake a seedhead you will likely hear the seeds rattling around. There are two ways to get them out.
1. Get a big paper bag and vigorously shake the heads upside down into the bag.
2. (better) Take a pair of large scissors and cut off the top of each seed head (take off about 1/2 inch of the tiny "tubes"). Invert the seedhead into a bag-- the seeds should fall out easily.
