Turkey Pot Pie

I made a turkey for New Year's Day and had some turkey left over so I decided to make a pot pie. I didn't use a recipe, just threw it together and it came out so good. Here's what I used:

About 3 cups cut up cooked turkey
1.5 cups chicken broth
1 can cream of chicken soup
4 small potatoes, diced
1 carrot, diced
1/2 onion, diced
2 large mushrooms, diced
3 small stalks celery, diced
salt and pepper to taste
about 1.5 tsps poultry seasoning
about 1 tablespoon parsley
2 pie crusts (I used the pillsbury refrigerated kind)

Boiled the potatoes, carrots, onions and celery until tender in one pan. In another, a large skillet, I "warmed up" turkey in 2 tablespoons butter, 1 tbsp olive oil. Added chicken broth and mushrooms. Put in poultry seasoning, parsley, salt, pepper. Let cook for a little while and added can of cream of chicken soup. Add cooked potatoes, carrots, etc.

Put pie crust in pan (I used a stoneware dish), pour in the above, and put another crust on top. cut slits in top after fluting sides. Bake at 375 for about 40 minutes.

This might make more than one pie depending on the size of your pan.

This was really yummy folks for leftover turkey or chicken. Why not do it with stew beef and change to beef broth and perhaps cream of mushroom soup.
