Leftover turkey?? Try this recipe.

Well, I had to face the leftovers today, they are no longer in the running for getting eaten, I think everyone would pretty much prefer to eat tree bark before eating any more leftovers. LOL

I played around and came up with a recipe of a bunch of stuff I had in the fridge, and surprise, it was a big hit! Thought I would share it with you all, as I am sure that I am not the only one in "leftover limbo". I am a big fan of the casserole, 1 dish, warm, rich & gooey, a real comfort food to me. Hope you try it and let me know what you think.

mix together in large bowl:
2 cans cream of mushroom soup
1 egg - beaten
1 cup sour cream
1 cup mayonaise
1 packet of lipton onion soup mix
1 can undrained mushroom pieces
2 cups shredded cheddar cheese
diced cooked turkey - as much as want - 4 cups worked well for me
1 bag frozen brocolli - thawed (mine were still icy when I tossed them in the bowl)
2 cups cooked rice

pour into a greased 9x13 pan and crush 2 tubes of ritz crackers, mix with 4 Tbl melted butter and top casserole. Bake at 350 for 1 hour to 1 1/2 hours.

notes:
Checked it after an hour and just seemed to need a little longer, so left in another half hour. Don't go longer, top would get too dark.
artichoke hearts might be good in this.
