Homemade Doughnuts

Calgary, AB(Zone 3a)

I love these!!!

Doughnuts

18 Egg Yolks
1 ½ cups Sugar, granulated
1 ½ cups Oil (Mazola)
4 cups Warm Water
1 tsp Salt
1 tsp Vanilla
2 pkg Yeast
1 cup Warm Water
1 Tbsp Sugar, granulated
12 -15 cups Flour

Mix 1 Tbsp Sugar in the 1 cup warm water. Sprinkle yeast & let stand for 10 minutes.

Beat the egg yolks well. Add remaining ingredients, including yeast mixture. Add about 12 -15 cups of flour & knead. The dough should be very soft & a little sticky.

Cover, with a tea towel & let rise until doubled. Room temp should be at least 23°C

Punch down and roll out on lightly floured surface. Cut out doughnuts, cover with a tea towel & let rise again until doubled in size.

Deep-fry 2 minutes per side @ 400°F.

Dip in warm glaze immediately. Place on wax paper or brown paper to cool. Bag & freeze once cooled.

Glaze

¼ cup Butter
½ tsp Salt
½ cup Milk
1 cup Sugar, granulated
1 cup Icing Sugar, powdered

Combine butter, milk, salt & sugar in a small pot. Boil 1 ½ minutes.
Add 1 cup of icing sugar. Glaze doughnuts while both glaze & doughnuts are still hot. Place on wax paper to cool.
