Mayonnaise
Approximate Yield: 1.5 Quarts
Egg yolks 3 or 2 whole
salt 1.5 tbl.
paprika 3/8 tsp
cayenne a few grains
mustard,dry 3/4 tbl
vinegar 3tbl
salad oil 1.5quarts
Mix egg yolks,salt,paprika,cayenne and dry mustard.Add1/2 of vinegar,add 1/2 oil very SLOWLY,beating steadily until emulsion is formed.add remainder of vinegar,beat well. add remainder of oil,beating steadily til emulsified. I can vouch for this, Imake it all the time, it is from my grandmothers catering book. jack
