Very Quick Tuna Noodle Dish

Lately I have had a craving for tuna casserole, but I didn't want to make a whole recipe because I am the only one who eats it. All I wanted was one serving.....and this is what I came up with.

1 generous handful of dry egg noodles
1 T Smart Balance/Oleo/Butter
1 T flour
1/2 C milk plus 2 or 3 T (if necessary)
1 3 oz can of tuna drained
1 slice of 2 % sharp cheddar cheese
Salt and Pepper to taste

Cook the noodles as directed on the package. Make a white sauce with the Smart Balance, flour and milk. (I used nonfat milk with maybe 2 or 3 T of whole milk.) Add the tuna, cheese and noodles to the white sauce and mix. If the white sauce is too thick just add some more milk. Salt and pepper to taste. (The next time I make it I will not add any additional salt. I think it would have been salty enough from the tuna and cheese, plus I salted the noodles. Cook until the cheese is melted stirring constantly.

It made a tasty,fast and easy entree.
