Grilled Salmon Salad w/Orange-Basil Vinaigrette

1/4 cup frozen orange juice concentrate, thawed
1 tablespoon + 1 1/2 teaspoons cider vinegar
1 tablespoon basil, fresh, chopped(1 tsp. dried basil)
1 1/2 teaspoons olive oil
8 ounces salmon fillet(1-inch thick)
4 cups torn mixed greens or mesclun
3/4 cup strawberries, sliced
1/4 cup cucumber, thinly sliced
1/8 teaspoon ground black pepper

~ To make the vinaigrette; whisk together juice concentrate, vinegar, basil and oil. Reserve 2 tablespoons of the vinaigrette.

~ Prepare grill for direct grilling. Grill salmon, skin-side down, over medium coals for 5 minutes. Turn and grill 5 minutes or until fish flakes easily with a fork, brushing frequently with reserved vinaigrette. Cool slightly.

~ Toss together the greens, strawberries and cucumber slices. Divide and place greens on two serving plates.

~ Remove the skin from the salmon. Break the salmon into chunks. Arrange the salmon onto the greens; drizzle with the remaining vinaigrette. Sprinkle with the pepper.
