Gardenwife isn't feeling too perky after her accident a few weeks ago. She sings a great version of the old Dinah Shore classic about this wonderful dish, so I thought I'd give her the version we make (and made today). Wow the house smells good :)
We had the pleasure of Kimberley and Howie's company for a few weeks 2 years ago - I'm just sorry we didn't make this for them while they were here.
Great thing about this recipe is you can make the apples, stick the pan in the frig, and then whip the batter up in the morning to serve it up warm :) Originally a Pepin recipe, but I've twisted it a bit !
Apple Pan Dowdy - jazzed up a bit :)
Melt 3 TBLSP of butter in a non-stick OVENPROOF skilllet - I use cast iron, but it's gotta be slick! Seriously, non-stick pans are great - just make sure they can take some oven heat. Peel and slice 2 large apples - we use Granny Smiths but McIntosh are just fine. Lay the apple slices in the melted butter, sprinkle on 1 TBLSP of brown sugar and simmer on med high heat til golden - turn and do likewise. Now - you can move forward or just stash the pan for when you're ready to eat.
Whip up in a food processor the following: 1 c cottage cheese - 3/4 c of sour cream - 2 tsp of vanilla extract - a good shake or two of cinnamon - 3/4 c of flour and 3 large eggs.
Pour this batter over the apples and heat on med high til you can smell the apples starting to carmelize - about 6 minutes. Take the pan off the stovetop and pop it under the broiler - watch carefully and remove when it's golden brown.
Slice in the pan and serve warm - it's super good :)
