For those of you not familiar with Panko: it is crumbs from rice crackers, usually found in the Flour Section or the Asian Foods Section of a good supermarket. They are SO light...wonderful in batters where you would use breadcrumbs...or any recipe where you would use breadcrumbs. Absolutely the best for fried stuff...or 'crab cakes' or tempura.
