Pea Salad

Spokane, WA(Zone 5b)

1/2 lb bacon
16 oz frozen peas (get these right before you make it - the long in the freezer, the more they shrinkle)
1 cup or so of Mayo
1 little vinegar (start with 1 Tbs)
1 Tbs Sugar
1 can 8 oz Water Chestnuts, chopped
2/3 cup Green Onions, chopped

Fry the bacon, drain, let dry a little, then split into little pieces. Some people like more bacon.

Rinse the frozen peas in a colandar under cold water until thawed.

Mix with the rest of the ingredients, according to the directions given, add salt and pepper to taste, or more sugar or vinegar to taste.

Refrigerate for at least 2 hours.
